How to turn a MOV into an MP3

iPhone videos and HEVC
Since the iPhone 7 generation, the camera's "High Efficiency" setting records video as HEVC (H.265) inside a MOV file. Many Windows apps and older editors can't open those files, which is often why people look for a converter in the first place. Here it doesn't matter: the converter ignores the picture and only decodes the AAC sound, so HEVC and H.264 MOV files behave the same.
If you want the whole video to play on Windows or upload anywhere, the MOV to MP4 converter rewraps it as an MP4, usually without re-encoding the picture.
Getting the MOV off your iPhone
